Buckwheat Pancakes (GF)

Prep Time – 10 min
Cooking Time – 15 min
Yields – 4 to 5 pancakes
Note – Can also be vegan

1 cup buckwheat flour
1 large egg (OR 2 tbspn flax seed meal with 5 tbspn of water)
1 tspn baking soda
a pinch of salt and sugar
2 tbspn of butter (OR coconut butter)
Almond milk or rice milk to give pancake consistency

1. Mix ingredients until it forms a smooth pancake batter
2. Add butter to a pancake pan
3. Pour in a little bit of batter to form the pancake
4. Cook on both side
Serve with pure maple syrup, raw honey or home made jam
