Chocolate Chip Muffins (VGF)
Prep Time – 10 minutes
Cooking Time – 12 to 15 minutes
Yields – 6 muffins
Notes – Pre-heat oven to 200 degrees
Ingredients
1 + 1/2 cup of amaranth flour
2 tbspn of flax seed powder with 4 to 5 tbspn of water
1/4 cup of pure maple syrup
1 tspn of baking soda
1 tspn of baking powder
1/2 tspn of vanilla essence
1 cup 60% dark or semi sweet chocolate chips
Directions
1. Mix the flax seed with the water and leave it aside until it turns into an egg like consistency
2. Mix all the other ingredients
3. Line a muffin tray with muffin cups
4. Pour the batter in
5. Bake for 12 to 15 minutes until a toothpick comes out clean
